Alligator Bites | Sybaritica
Today’s dish is my own rendition of the way I have most commonly been served Alligator in restaurants… that is to say, deep-fried with Cajun spices. Sometimes, I have had appetizers with chunks of Alligator meat that were first battered but I prefer to have them very lightly breaded as I have done here. The process is not difficult, and the result is very nice indeed…
The Ingredients
- 3/4lb Alligator meat sliced into strips;
- 1 Egg;
- ½ cup fine Bread Crumbs;
- 3 tsp. each Garlic Salt, Black Pepper, ground Cumin and ground Chilli;
- 1 Tbsp. Sherry.
First, stir together the breadcrumbs and dry spices.
Toss the Alligator strips with the Sherry and allow them to marinate for at least 20 minutes.
Now beat the egg and stir in the alligator strips. Toss these with the seasoned breadcrumbs.
You can use a deep-fryer for the actual frying if you like but I find that very wasteful of oil and I find it better to do a few pieces at a time in a shallow pan with about 2cm of oil in the bottom. Fry the pieces for a minute or two and drain on paper towels. Serve while hot.
You can provide any sort of dipping sauce you like (or just a little lemon juice). Here, I mixed together tartar sauce, a squirt of lemon, and a little Sriracha Sauce).
